I am going to keep these relatively unambitious, because the big one is, you know, big.
 
2018 Goals
  • Support Lut through the cancer treatment process
  • Continue general adulting as necessary.
  • Publish Golden Coils
  • Edit and publish the two Demon books. 
  • Post monthly updates on whatever I did.

Stretch goals
: finish some other book and/or stories.
 
Ideally, I'd like to write and publish a fourth book and have two more books drafted. In a hypothetical year without cancer, this would not be unreasonable. Even with cancer last year, I edited three books, published two, and drafted 1 plus most of another.
 
But. Cancer.
 
I will certainly work on some new stories this year. I can't picture a year where I only write new fiction for one month, which is about how long I expect finishing Demon's Sigil to take. But having the focus to finish something while editing ... Let's not count on that.
 
Three new books will suffice, even if they're books mostly or entirely finished last year.

January Goals
Eat at least a pound of veggies per week. I want to eat more vegetables, but I don't want to set a goal that would be, like, an actual healthy amount to eat per day. Because then I would give up. I don't really like veggies or preparing them. I am trying my father's method, which is to buy frozen steam-in-bag veggies that come in some kind of sauce so they're (a) easy to prepare and (b) not actively unpleasant to eat and (c) will not spoil before I get to them. I've only found one that meets all three criteria so far: broccoli in cheese sauce.  I need to find some more if I'm going to work up to eating some veggies every day, because the broccoli with cheese gets unpleasant to eat after a couple of days in a row. So. Any suggestions? o_o
Finish Demon's Sigil: This is going to be easy because I'm on the last scene now. \o/

Are there any veggies you do like to eat, generally? Or, like... Stir Fry style? (Teriyaki sauce is one option with frozen veggies, isn't it?)

I like raw carrots with 1000 Island dressing at a couple of buffet places 'round here. And tomatoes. And sliced cukes.

Cauliflower with cheese? (It's... okay...)

There are some frozen pastas that are made with lentils instead of normal pasta stuff, or with a lot added, so they're a serving of veggies or some-such -- with sauce, they're probably okay. (Glop of from-jar tomato sauce in a small cup, COVER WITH PAPER TOWEL, 30 seconds in microwave...)

I like carrots and hummus.
also there's seasoned canned veggies - gloria's is a brand around here: greens, sweet potato, etc. they're quite good.

The same brand that had frozen 'steam-in-bag' broccoli and cheese also had some frozen random veggies and marinara-ish sauce... I think it might have had some pasta mixed in but it was mostly veggies.

I eat plenty of vegetables but I have no issues with cutting them up and cooking 'em, I'm not sure how much cooking you're prepared to do. Maybe buy frozen veggies and sauce separately so you can mix and match as you like?

Other than that, some things that may work:

* Grate zucchini and mix in with ground beef and seasonings, make meatloaf or meatballs
* Start with frozen spinach, mix with egg and shredded cheese, make quiche or frittata
* The old 'grate cauliflower and make faux mashed potatoes' trick (okay, I haven't done this but I hear it works)
* Mixed rice, add frozen mixed veggies and some salt/seasoning to the rice in the cooker, eat with protein of choice (if you're going to add an egg, I'd fry or scramble that separately)

My spouse makes me a fun skillet [for either breakfast or lunch] that's black beans, frozen cauliflower, mushrooms, and turkey with cheese melted on top. Lots of veggies & protein, but fast to fix. Also, yummy and filling.

I made a double recipe of this for lunch today: http://thepioneerwoman.com/cooking/butternut-squash-risotto/
(sans cream, and with romano instead of parmesan)

It could be done with frozen veggies instead of the butternut squash, and would take less than an hour without dealing with the squash. I used to be very intimidated by risotto, but it's not actually that hard or time-consuming, and we get eight person-meals out of a double recipe.


Do you like satay? We have a peanut sauce that's delicious over rice/pasta and steamed veggies:

Heat together in pan:
1/4 cup natural peanut butter
1/3 to 1/2 cup soy sauce
2 Tablespoons water
1/4 cup maple syrup or 1/3 cup brown sugar (I use about 2T brown sugar)
1/4 cup sesame oil
1 teaspoon minced ginger root
1/2 to 1 teaspoon crushed red pepper flakes

Stir until combined and thickened and serve hot on top of stuff.

Chili is also a go-to around here. Canned tomatoes, meat and/or beans, some mix of veggies (fresh, frozen, anything from zucchini to sweet potato to carrots), maybe corn, lots of chili powder, and cook for a while. Even better if you have a crockpot.

Frozen vegetables are the best, I dislike prep because it means I have to then wash up.
I've a preference for pre-chopped corn, carrot and pea mixes. Microwave, add unsweetened yogurt, salt, pepper, and that's food ready in 10min with only one bowl to wash up. Use fish and a little bit of sour stuff (lemon/vinegar) if you can't have dairy.
