In Space Empires IV the AI wasn't very good, and there was a LOT of economy-building stuff you could do instead of destroying them. Terraforming planets, breeding (conquered) alien races to use the planets with atmospheres different from yours, factories and science labs and asteroid mines and ringworlds and dyson spheres eventually...
The computer would be attacking you the whole time, though, and you had to basically be deliberately not fighting back in order to avoid wiping them out accidentally.
