At some level in his mind, Damon exists as a defense mechanism. Damon's purpose is to do everything that the Gabriel persona is conflicted about. Damon doesn't believe in G-d so he doesn't feel guilty about hurting bad guys, or about his sexual attraction to men or about sex in general. Damon isn't shy or awkward or afraid of rejection. Most importantly, Damon is NOT GABRIEL, so Gabriel is NOT RESPONSIBLE for what Damon does or did. This is why Gabriel is generally 'not present' and almost never remembers what Damon did: the Damon persona exists to protect the Gabriel persona from the consequences of certain actions. The Gabriel persona remains pure: a good person, a man who helps people and doesn't hurt them, a man who's saving himself for marriage. Pretty much the only times that the Gabriel persona is going to be aware of what the Damon persona is doing while in control is when Gabriel needs to assume control to do something Damon can't (like heal a person). It's possible that Damon could be in control when something so important happens that the Gabriel persona has to know about it or disaster will result, and in that case Damon might pass the information along. But as a mental defense mechanism, protecting the Gabriel persona and maintaining that pure part of himself, is so important that it might override even global threats. In other words: if Damon REALLY wants Gabriel to know something, he'd leave a note. Whether or not Gabriel would believe it is another matter.
The Gabriel persona, being the pure-and-protected portion of the individual, is also shielded from the knowledge of his own insanity. As far as Gabriel is concerned, Damon is separate being, a demon or a parasite from the super-soldier process or SOMETHING. Not a part of Gabriel.
The Damon persona, by contrast, is aware this is a load of bull. Damon knows that he and Gabriel are the same person and that he is crazy. He just doesn't care. This is why Damon always remembers what Gabriel does: the Gabriel persona doesn't have to protect Damon from anything. The Damon persona is not aware on any conscious level that Damon exists as a defense mechanism, which is why he'll torment Gabriel by showing him fantasies that aren't happening. Damon and Gabriel hate each other because the whole person hates himself, hates being conflicted, hates being unable to settle the conflict in any sane way. So the conflict is settled in an insane way, by splitting into two personas that can hate each other.
